Opening December  17th 2015

UPDATED:  Brider is OPEN as of December 17th!  

The folks at Acorn said that Brider could be opening to the public as soon as this week!  Woot Woot!  They recommended we follow @oakatfourteenth and @acorn_denver and @BryanDColorado for the official announcement but for those of us who live in Riverfront Park we can just walk on over and see first hand.

Oak and Acorn Owners Bring Us Brider

There is a new glow emanating from the new Nichols building on Platte Street.  As snow blanketed the streets of Riverfront Park residents paused on their dog walks and commutes to see something new happening through the windows of the new Brider (pronounced bri-day) Restaurant.  Chefs worked in the kitchen and servers raced across the floor in what might be a test run of soft opening.   Whatever the exercise was for there is no doubt that the opening of Brider Restaurant is right around the corner.

Brider, which is French for “tying” a piece of meat, was designed to  emphasize the rotisserie concept.  They will focus on serving rotisserie-cooked meats such as chicken, pork, and lamb leg with meat cooked in an Earth stone oven.  Don’t worry, plenty of veggies are planned to complement the meat centric menu.

Brought to us by  Chef Steven Redzikowski and beverage director Bryan Dayton, the partners behind Oak at Fourteenth in Boulder and Acorn in Denver.   Brider will offer 75 seats in their eatery set on the ground floor of the Galvanize office building.  Brider has been designed as a counter-service, fast casual rotisserie-centric place serving breakfast, lunch, and dinner.

The most important meal of the day has gotten a special focus as they decided to recruit a superstar in order to attract a strong breakfast crowd.   The partners hired a pastry chef, Michael Conti, from Chicago.

You will also be able to enjoy grab-and-go pastries, sandwiches, salads, and terrines plus a beverage program with pull taps offering beer, soda, wine and cocktails.
