As we mentioned in a previous post, Brider opened last Thursday on the first floor of the Galvanize building located on Platte Street. The owners of OAK at Fourteenth in Boulder and Acorn inside the The Source describe their newest creation as a “quick casual dining spot that offers quality new American cuisine centered around our rotisserie oven.” We stopped by earlier this week to try Riverfront Denver’s newest establishment and although this was our first visit, it certainly will not be our last. 

What’s there to love:

Brider’s concept reminds us a little of Mercantile in its setup. If you’re in a hurry, there’s a delectable variety of freshly made pastries, desserts, breakfast and lunch sandwiches ready to grab and go. But, if your schedule allows, you have the option of dining at a private table in the simply veiled dining room or at the bar.

Presentation in the restaurant industry is paramount and the way in which this café-oriented eatery displays their side dishes and desserts along the line is an enticing way to connect guests with the artistic nature of their thoughtful cuisine… a complementary addition to simply reading the menu.

 An expansive bar featuring 18 taps: four beers, four wines, four signature cocktails and six other non-alcoholic beverages including kombucha and nitro coffee.

 For us, Brider is a thoughtful presentation of quality ingredients and complex flavors culminating in a robust menu of options all of which are packaged in a tidy, simple space so as not to detract from the restaurant’s main purpose: an exceptional culinary experience. 

May we suggest the Rotisserie Chicken Bahn Mi and the Meatball Sandwich?
